Not Yo' Mama's Banana Pudding
Here's the Paula Dean recipe for the banana pudding that Rodney made over Christmas. I made it for the McShanes and everyone loved it - not good if you're on a diet though!
2 bags Pepperidge Farm Chessmen cookies
6-8 Bananas, sliced horizontally into small 1 - inch disks
2 cups milk
1 (5 oz) box instant French vanilla pudding
1 (8 oz) package cream cheese, softened
1 (14 oz) can sweetened condensed milk
1 (12 oz) container frozen whipped topping, thawed
Line the bottom of a 13x9x2 inch dish w/1 bag of cookies (I crumbled them to make it easier to eat) + layer the bananas on top.
In a bowl, combine the milk & pudding mix & blend well using a hand held electronic mixer.
Using another bowl, combine the cream cheese & condensed milk together & mix w/hand held mixer till smooth. Fold the whipped topping into the cream cheese mix. Add the cream cheese mix to the pudding mix (which should've set by now) and stir till well blended. Pour the mix over the cookies & bananas and cover with the remaining bag of cookies (which, again, I crush) Refrigerate until ready to serve.
