I started using Swagbucks again and signed up for netflix!

I started using swagbucks as my home page again. I had a little under 1300 points with which I was able to redeem $10.00 Amazon gift cards.I haven't used swagbucks in a year so I was impressed that I still had an account with them. I found out that you can apply the gift cards to your amazon account which doesn't expire and you can have waiting for your next amazon purchase. I got 1000 swagbucks for signing up for netflix for one month trial period. if i decide to keep it, $7.99 a month for netflix.

Chicken Carbonara Alfredo with Broccoli

I roasted a whole chicken a few nights ago. I stuffed a couple of lemons and garlic cloves up it's bum and rubbed it with poultry seasoning. I made giblet gravy with the giblits, liver and a few hard boiled eggs too. The gravy was my favorite part. I shredded the leftover chicken tonite and used the creamy alfredo sauce packet that was in my cabinet. I threw in some bacon crumbles I keep in my freezer and some sliced mushrooms from Trader Joe's. I boiled some broccoli florets (on sale @ giant eagle) in the same sauce pan I later threw in some angel hair pasta. Dinner was made in less than 15 minutes!!! and cheap. So cheap.

Lightly grease a 13-x-9-inch baking dish and spoon in about 1/3 of the sauce. Arrange 12 of the raviolis on top; then evenly lay all the spinach over the top of the raviolis. Quinoa Pilaf

Quinoa Pilaf 2 Tablespoons olive oil 1/2 onion, chopped or 1 shallot, finely chopped 2 cups quinoa 4 cups chicken broth 1 teaspoon parsley flakes In large fry pan with a lid, heat the oil over medium heat. Add the onion and quinoa. Saute until the quinoa starts to brown and the onion becomes clear. Add chicken broth and parsley flakes and bring to a slight boil. Cover and reduce heat. Cook for 12 minutes, covered, until liquid is absorbed. Fluff with a fork, recover and allow to steam for another 10 – 15 minutes. Season with salt and pepper, and serve. Mince the garlic, tear the spinach leaves if necessary, and grate the cheese. Heat the oil in a deep skillet, add the sunflower seeds and toast for 2 minutes or so, until they start to brown. Add the garlic and cook until translucent. Add the spinach and cook until it is wilted. Stir in the quinoa, cheese, and lemon juice.

Wedding Soup Recipe

Here's Aunt Mary's Wedding Soup recipe that was so delicious! WEDDING SOUP 2 boneless chicken breasts 2 large cans college inn chicken broth 1 pkg. chopped spinach (thawed & drained) 3 cups water 1 carrot 2 eggs 1/3 cup parmesan cheese Bring water boil; add chicken. Grate carrot into boiling water. After 10-15 minutes remove chicken. Cool, then dice. Add College Inn broth; bring to a boil and reduce heat. Beat 2 eggs, add Parmesan cheese to eggs and blend. Drop egg mixture into broth, stirring through with fork. Add drained spinach, meatballs, diced chicken. Simmer for 15 minutes Of course you can make your own chicken stock, but I just used the canned broth but I did use the lowfat, low sodium one. Also, the drier you get the spinach the less green the soup broth gets. MEATBALLS 1/2 lb. ground beef 1/2 cup italian bread crumbs 1 egg (blend above and roll into dime size meatballs) I cooked my meatballs before putting them into soup

You may even be able to get away with putting in only 1/4 cup of the white sugar instead of 1/2 cup. 4 Ingredient Tomato Sauce

I stumbled across this blog when searching for menu planning ideas and came across this interesting article. She gives the recipe for a 4 ingredient tomato sauce that can be cooked in bulk then frozen in 2 or 3 cup portions. Then you modify the recipe to create 10 different dishes. Loved this idea. I just cooked it last night as I was cooking the salmon and it was pretty tasty. I used one of those humongous cans of tomatoes and about 2- 28 oz. cans of tomatoes and then added 1 - 14 oz. Next time I will try to double the recipe because it only made (5) 3 cup portions. While I am cooking this I would probably put together a lasagna dish to put in the freezer. My mind is whirling with possibilities. You have to plan for a day that you'll be home as it takes about 4 + hours to cook this marinara sauce and then even longer to let it cool and put away. SparkRecipes World's Best (and easiest) Salmon

I made this for dinner tonight and it was so good and low in calories. Here's the recipe: Ingredients 1/4 cup pure maple syrup (NOT pancake syrup!) or honey 1/4 cup soy sauce 2-3 cloves minced garlic 12 ounces fresh or thawed salmon Directions Combine the first 3 ingredients in a gallon-size ziploc bag, shake it up, and then add the salmon. Allow to marinate in the refrigerator for an hour, turning after half an hour. Pour the salmon and the marinade into a baking dish and bake in a 350 degree oven, covered with foil, for 15 minutes. The salmon is done when it flakes easily at the thickest part. Enjoy! Makes (4) 3 ounce servings. Buca Di Beppo Salad Dressing Recipe

1/3 cup white (or red) wine vinegar 3/4 tsp. dried oregano 1/2 tsp. dry mustard 1 tsp. salt 1 pinch of black pepper 1/8 - 1/4 cup red onion, chopped very fine (your preference - i use 1/4 c) 1 1/2 tsp. garlic, chopped 1/2 - 1/3 cup olive oil (your preference - i use 1/2 c) Makes 1 cup for almost 20 servings of 2 TBSP each (sometimes i split this recipe in half and use it for about a head of lettuce) Combine the vinegar, oregano, dry mustard, salt and pepper in a blender and mix Add onion & garlic and chop up Blend together while slowly adding the olive oil (by adding it slowly it will emulsify w/the other ingredients creating a thicker vinaigrette. Using Leftovers...

I got this in an email today and thought we could all use it... "Leftover spaghetti sauce can be transformed into a tasty Italian soup called Pasta e Fagioli. Just thin out the sauce out with chicken broth (or water) to make it more soup-like and throw in some cooked elbow macaroni. This soup gets its heft from garbanzo beans, so add a generous amount of beans to the pot. For rounding out the meal, add a salad and some whole grain bread with Parmesan sprinkled over the top of the soup. When you have a bit of chicken left over but not quite enough to feed everyone, turn it into a meal by making chicken and rice soup. Brown rice is a great way to sneak in some fiber and nutrients and makes this a much better choice than chicken noodle soup.
