Chicken Soup & Oranges

It is a snowy tundra outside. It's hard to keep up with the snow shoveling because it WON'T stop snowing. Not that I'm complaining. But, it looks like a snowy wasteland. Check out the sidewalks and roads. It's the kind of day that makes me want to eat homemade chicken & cabbage soup (with rice), made with my pressure cooker of course in less than 30 minutes. I ate a happy colored orange for dessert. Yummy.

  3. 1-salt, pepper and garlic powder the chicken (i used legs and thighs and wanted to cook it on the bone to flavor the broth)
    2-brown the chicken both sides with vegetable oil (olive oil doesn't handle high heat too well, julia childs says to get a good browning by drying the meat, I pat the chicken down with paper towels
    3-add and saute some garlic and onion- i use a lot of onion- with the chicken, scraping up the brown bits on the bottom with it
    4-add 1 cup of chicken broth (i use my hot water kettle to heat the water to add to the boullion)
    5- I add 3-4 cups of water only because I don't like to make big batches of soup. I only like to make enough for 2-3 days
    6-bring it up to pressure and set timer for 15 minutes
    7-quick release it, add your vegetables, i used shredded cabbage, and some patis, lemon juice and whatever other seasoning. for cabbage, i bring it back up to pressure for 3 minutes and quick release it. You can take out the bones then if you want, it should be falling off by then. adjust flavors to taste and serve with a small scoop of rice in a bowl. less than 30 minutes! Anna can't get enough of this soup. rieker says the soup tastes even better after a few days. because anna likes it so much, I try to have it available for her to snack on when she gets home from school.
